Valentine’s Day is only a few weeks away! Are you celebrating in style or staying in? Tyler and I prefer to stay in, we like to save our out on the town dinners for a day that is a little less busy. We stay in and make a great dinner and watch a movie or play board games, I know, exciting right?! but we are just happy to be in each others company.
With any Valentine’s Day dinner, whether it is a night in or out there MUST be a dessert. It’s kinda my favorite part of the meal. Okay, maybe not kinda, it is absolutely my favorite part! Valentine’s Day is the holiday for desserts, the classic flavors that this holiday is known for are some of the best. Chocolate, red velvet, marshmallow and my favorite strawberry! It might just be my go-to for the holiday sweet treat. Check out my Strawberry Heart Hand Pies that I made last year.

With the holiday approaching I wanted to create a strawberry recipe that would be a perfect dessert to a nice dinner. Immediately I thought of those beautiful “I love you” cupcakes from Sprinkles. I fell in love with these cupcakes the minute I saw them. They are so simple and beautiful to look at. That was the look I wanted for my cupcakes; simple, pretty and packed with flavor.
As soon as I decide on my main flavor for a recipe, I do my research on what flavors pair well. Ginger stood out to me as a secondary flavor and it did not disappoint. The mixture of the strawberries, moist white cake and the little zing of ginger is a dream. I could probably eat these cupcakes like a muffin because they are that good. BUT I would never do that because this frosting is so delicious! Cloud like and a taste like candy makes it perfect for this sweet holiday.

Strawberry Ginger Cupcakes with Fluffy White Frosting
Ingredients
For the cupcakes
- 2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 3 teaspoons ground ginger
- 1/2 cup butter, softened
- 1 cup sugar
- 2 large eggs, separated
- 1 teaspoon vanilla extract
- 1 cup milk
- 1/8 teaspoon cream of tartar
- 1 cup chopped strawberries
For the frosting
- 1 1/2 cup sugar
- 1/4 teaspoon cream of tartar
- 1/8 teaspoon salt
- 1/3 cup water
- 2 large egg whites
- 1 1/2 teaspoons vanilla extract
Instructions
For the cupcakes
- Preheat the oven to 350 degrees. Line cupcake pans with liners.
- In a medium bowl, sift the flour, baking powder, ground ginger, and salt and set aside.
- In a large bowl, beat the butter until creamy using an electric mixer. Gradually add the sugar and beat until light and fluffy.
- Add the egg yolks, one at a time beating after each addition. Add the vanilla extract and beat until combined.
- With the mixer on low, alternately add the flour mixture and milk, beating well in between. Set aside
- In a small bowl, beat the egg whites until foamy. Add the cream of tartar and continue beating until stiff peaks.
- Add about half of the eggs whites and fold into the batter until combined. Fold in the remaining egg whites.
- Using a 1/4 cup, pour batter into prepared cupcake pan to about 3/4 full.
- Bake for 25-30 minutes or until a toothpick inserted center of cake comes out clean.
- Allow to cool before frosting
For the frosting
- Combine the sugar, cream of tartar, salt, water, and egg whites in the top of double boiler. Beat with an electric mixer for 1 minute.
- Place the top pan over boiling water, make sure the water is not touching the bottom of the pan.
- Beat constantly on high speed until the frosting starts to get very fluffy, about 6-8 minutes.
- Beat in the vanilla extract.
- Remove the frosting from the stove and allow to cool for 1 minute. You will want to frost the cupcakes very soon after taking it off the heat because it will start to stiffen.
- Fill a piping bag equip with extra large round tip. Start on the outside edge of the cupcake and circle it once and then in to the center.
- Top with a conversation heart or other festive garnish.
