A delicious turkey sandwich with cranberry and a pesto spread. This turkey sandwich would be the perfect leftover Thanksgiving sandwich. Easy to make and packed full of flavor.

The first place my husband and I rented was a little apartment in a city right outside of Portland. It was a cute first place, next to some cute shops and most importantly, it was really close to both of our works. Seriously, traffic has gotten out of control! I miss the 10-minute commute! Anyways, it was also really close to a Starbucks. I am more of a local coffee shop gal these days, but with a Starbucks that close, I visited quite frequent.
During the time I was planning my wedding, they had a delicious turkey sandwich. I remember because I would pick up an iced green tea and the sandwich to eat while I was doing weddings stuff at home. I loved this sandwich. It was a turkey, cranberry and pesto sandwich all on a mini baguette roll. One day it was gone! I couldn’t believe it, I finally found a grab and go sandwich that wasn’t crap and it was gone months later. Re-creating it was the only way to enjoy this scrumptious sandwich again.


A few weeks back, I decided to take on the challenge of getting this sandwich just right. Mostly because I was craving it but also because you know what holiday is coming up! Thanksgiving! This would be the perfect leftover recipe. Turkey, check. Cranberry, check. You could even use the leftover rolls as the bread, check.
The good thing about this sandwich is that it is really easy to make. It only takes a few ingredients, but you will be surprised at how much flavor this sandwich packs. I used a basil pesto with a garlicky taste. There are so many different types of pesto, you could really have fun with the flavors. I enjoyed the garlic flavor in this sandwich but I think most pestos would taste delicious. For the cranberries, I used dried but speaking of leftover Thanksgiving foods, cranberry sauce would work also.
Make this sandwich ahead of time for an easy weekday lunch for work. You will be thanking yourself as you are enjoying this at your desk. Or make it for a mid-day snack to refuel for cleaning the house after that fab Thanksgiving dinner you hosted. Anywhere you decide to enjoy this sammie, you will not regret it. Pile on the turkey, spread that pesto thick and enjoy!

Turkey Cranberry Pesto Sandwich
Ingredients
- 4 tablespoons green pesto
- 1/4 cup dried cranberries
- 4 oz. sliced turkey
- 2 romaine lettuce leaves
- 2 sandwich rolls
Instructions
- Cut sandwich rolls in half and spread pesto on the bottom half of the roll.
- Scatter dried cranberries on top of pesto.
- Put a thick layer of turkey on top of the cranberries and pesto
- Put a romaine lettuce leaf on over and top with the other half of the sandwich roll.
- Cut the sandwich in half and serve.
