Puff Pastry Baked Eggs

Ingredients

  • 3-4 Slices bacon
  • 1 Sheet Puff Pastry
  • 1/4 Cup chopped parsley
  • 4 eggs

Instructions

  • Pre-heat oven to 350°. Line a baking sheet with parchment paper or a baking mat and set aside.
  • Using a skillet, cook the bacon until crispy and break into bits.
  • Turn puff pastry sheet onto a floured surface and lightly roll out with a rolling pin.
  • Cut the puff pastry sheet into 4 squares; about 4" each.
  • Place squares on the baking sheet and place a small ramekin or oven-safe baking dish in the center of each square. If you do not have an oven-safe dish you can also use tin foil full of beans or rice.
  • Bake for 6-7 minutes at 350° or until the sides have puffed up and the center is flattened.
  • Remove from oven and crack an egg into the center of each puff pastry square.
  • Bake for another 10-12 minutes until egg is set and white is completely cooked.
  • Remove from the oven and sprinkle bacon bits and chopped parsley over the top.
