Easy Two-Meat Chili

Ingredients

  • 1/4 cup oil
  • 2 pounds lean beef cut into small cubes
  • 1 pound pork cut into small cubes
  • 1 large onion, finely diced
  • 2 garlic cloves, chopped
  • 3-4 tablespoons hot chili powder
  • 1-2 tablespoons flour
  • 2 21 oz. canned peeled roma tomatoes
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 2 teaspoons cumin seed
  • 1/2 teaspoon coriander
  • 1 oz. unsweetened chocolate
  • 1 can kidney beans, pinto beans, and black beans; drained and rinsed

Instructions

  • Drain tomatoes and keep liquid in a bowl. 
  • Chop tomatoes into large chunks. 
  • Heat oil in a large stew pot over medium-high heat.  
  • Add onions and garlic; saute for 2-3 minutes. 
  • Add beef and pork; stir frequently until meat is fully browned and onion is soft. 
  • Combine chili powder and flour, mix until incorporated; add to meat mixture and stir until equally covered. 
  • Add tomatoes and stir until combined. 
  • Add remaining spices, simmer slowly for about 2 hours; stirring often. 
  • Add unsweetened chocolate 1 hour into cooking; stir until chocolate is melted. 
  • Serve hot with cheddar cheese, cream cheese, and tortilla chips.
