Pre-heat oven to 350°
Remove stems from all mushrooms.
Add smoked salmon, olives, chives, garlic, paprika, and lemon juice into a medium bowl and stir until combined.
Add cheese and stir until evenly combined.
Take a small spoonful of stuffing and compact slightly with fingers; slide it off spoon into a mushroom.
Push down on stuffing slightly to push it into the mushroom.
Repeat until all mushrooms are filled.
Line mushrooms on a baking sheet and place in oven.
Bake for 15 minutes or until hot and cheese is melted.
