Smoked Salmon and Gouda Stuffed Mushrooms

Servings: 24 stuffed mushrooms

Ingredients

  • 24 cremini mushrooms
  • 3/4 cup shredded smoked salmon
  • 1/3 cup finely chopped kalamata olives
  • 2 teaspoons minced chives
  • 1 cup finely shredded Gouda cheese
  • 1 garlic clove, minced
  • 1/2 teaspoon paprika
  • 1/2 teaspoon lemon juice

Instructions

  • Pre-heat oven to 350° 
  • Remove stems from all mushrooms. 
  • Add smoked salmon, olives, chives, garlic, paprika, and lemon juice into a medium bowl and stir until combined.  
  • Add cheese and stir until evenly combined. 
  • Take a small spoonful of stuffing and compact slightly with fingers; slide it off spoon into a mushroom.  
  • Push down on stuffing slightly to push it into the mushroom. 
  • Repeat until all mushrooms are filled. 
  • Line mushrooms on a baking sheet and place in oven. 
  • Bake for 15 minutes or until hot and cheese is melted.
