Preheat oven to 450°
Mix water, salt, honey into the bowl of a standing mixer with a dough hook attachment.
Add the yeast and let rest for 5 minutes.
On medium speed, mix in flour a little at a time until dough comes together.
Cover and place in a warm place for an hour.
Once the dough has sat for an hour, remove and place on a floured board.
Cut into eight even pieces.
Using your hands, roll and stretch dough to create thin ropes.
Fold into a classic pretzel shape or cut ropes into bite-sized pieces.
Bring a medium saucepan of water and baking soda to a boil. Always add the baking soda to the water before it starts to boil.
Boil each pretzel for about 30 seconds.
Transfer to a baking sheet lined with parchment paper or a baking mat.
Brush with beaten egg and sprinkle with coarse salt.
Bake for 10-15 minutes or until golden brown.
Remove from the oven and sprinkle with a little more salt.
Serve with mustard or honey mustard.
