Remove dough from refrigerator and turn on a floured board. Roll each disk out to about 1/8 inch thick or an 8-10 inch circle.
Transfer to a baking sheet lined with parchment paper or a baking mat.
Spoon 1/4 of the cherry filling into the center of each circle leaving a 2-inch border.
Carefully fold the edges over the filling.
Brush dough with egg white and place sliced almonds on top.
Bake galettes for 35 - 40 minutes or until golden brown.
Remove from oven and allow to cool for five minutes.
Serve with vanilla ice cream or whipped cream.
