Bourbon Caramel Popcorn

Ingredients

  • 8 cups popcorn, popped
  • 1 cup butter (two sticks)
  • 1 1/2 cups packed brown sugar
  • 1/3 cup light corn syrup
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 cup bourbon

Instructions

  • Preheat the oven to 225 degrees.
  • Line a baking sheet with parchment paper or baking mat. Spread the popped popcorn onto the baking sheet. 
  • In a medium saucepan melt the butter over medium heat. Add the sugar and corn syrup and whisk until smooth and sugar is dissolved.
  • Add the vanilla extract, salt and baking soda and continue to whisk constantly until the sauce thicken; about 4-6 minutes.
  • Turn the heat to low and add the bourbon, whisk until evenly combined.
  • Pour the mixture over the popcorn and toss with a rubber spatula to coat evenly.
  • Transfer to the oven and bake for 45 minutes tossing the popcorn ever 15 minutes.
  • Allow the popcorn to cool for 30 minutes before serving.
