Preheat the oven to 225 degrees.
Line a baking sheet with parchment paper or baking mat. Spread the popped popcorn onto the baking sheet.
In a medium saucepan melt the butter over medium heat. Add the sugar and corn syrup and whisk until smooth and sugar is dissolved.
Add the vanilla extract, salt and baking soda and continue to whisk constantly until the sauce thicken; about 4-6 minutes.
Turn the heat to low and add the bourbon, whisk until evenly combined.
Pour the mixture over the popcorn and toss with a rubber spatula to coat evenly.
Transfer to the oven and bake for 45 minutes tossing the popcorn ever 15 minutes.
Allow the popcorn to cool for 30 minutes before serving.
