Easy & Delicious Crab Stuffed Tomatoes

Servings: 2 stuffed tomatoes

Ingredients

  • 3/4 cup flaked crab meat
  • 1/4 cup diced celery
  • 2 tablespoons grated onion
  • 1/3 cup grated cheddar cheese and extra for topping
  • 1/3 cup mayonnaise
  • Dash of salt
  • 2 large tomatoes
  • 3 strips of bacon

Instructions

  • Pre-heat oven to 350° 
  • Take tomatoes and cut a circle on the top and remove. 
  • Use a spoon and hollow out the tomato. 
  • Place hollowed tomatoes upside down on a plate to allow liquid to drain. 
  • Cook bacon and break into bits, set aside. 
  • Mix crab, celery, onion, 1/3 cup cheddar cheese, mayonnaise, and salt together in a medium bowl. 
  • Place tomatoes in a baking dish and stuff with crab mixture.
  • Bake tomatoes for 20 minutes or until a fork stuck in the middle comes out warm.
  • Remove tomatoes from oven and sprinkle with bacon bits and cheese. 
  • Broil on low until cheese is melted.
