Crudite Cups with Lemon Aioli

Ingredients

For the aioli

  • 1 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons finely chopped parsley
  • Salt & Pepper to taste

For the crudite cups

  • 4 plastic or glass cups
  • 4 appetizer picks
  • 4 Romaine lettuce leaves
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 pickling cucumbers
  • 12-15 snap peas
  • 12 grape tomatoes

Instructions

For the aioli

  • In a medium bowl, add mayonnaise, lemon juice, parsley, and dill and stir until combined. 
  • Add salt and pepper to taste and stir until smooth. 

For the crudite cups

  • Using a spoon carefully add 1/4 cup of the aioli to the bottom of the cups. 
  • Trim the romaine leaf bottom off so it sits flat in the cup. Add the leaf into the cup pressed against the side of the cup. 
  • Chop the bell peppers and pickling cucumbers into small strips. Layer them in the cups along with the peas. 
  • Spear three grape tomatoes on the appetizer picks and add in. Serve soon after assembly.
