Crudite Cups with Lemon Aioli

Ingredients
For the aioli

cup
mayonnaise

lemon juice

tablespoons
finely chopped parsley
Salt & Pepper to taste
For the crudite cups

plastic or glass cups

appetizer picks

Romaine lettuce leaves

red bell pepper
1
yellow bell pepper

pickling cucumbers

snap peas

Instructions
For the aioli
In a medium bowl, add mayonnaise, lemon juice, parsley, and dill and stir until combined.
Add salt and pepper to taste and stir until smooth.
For the crudite cups
Using a spoon carefully add 1/4 cup of the aioli to the bottom of the cups.
Trim the romaine leaf bottom off so it sits flat in the cup. Add the leaf into the cup pressed against the side of the cup.
Chop the bell peppers and pickling cucumbers into small strips. Layer them in the cups along with the peas.
Spear three grape tomatoes on the appetizer picks and add in. Serve soon after assembly.
